Good day muffins – Vegan

2 cups whole wheat white flour
1 1/4 cups raw cane sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup shredded carrots
1/2 cup shredded parsnip
3 tbls shredded ginger
5 tbls currants
1/2 cup flaked coconut
1 1/2 cups applesauce
1/4 cup coconut oil
1 tsp almond extract

Heat the oven to 375*. Spray or paper line muffin tins. Mix all of the ingredients together and fill the tin. Bake for 20 minutes. Cool on a wire rack. Best served with hot sweet tea. Makes 40 mini muffins or 24 standard sized muffins.
